           Annie's 5 ⭐️ Granola

So even though Covid is still hanging around, and we can't exactly throw caution to the winds just yet, at least the world has come to grips with it by relaxing a little. People are eating out, hopping on planes, shopping in malls and we are all very grateful for it. To celebrate this Newer Normal, I'm posting a recipe that is also very relaxed in the sense that you can add whatever your favourite ingredients are (in the same genre of course) and in whatever quantities you want. This granola can keep for weeks and weeks in an airtight container and is delicious with sliced banana (or your other fave fruit), with milk (full fat, skim, oat, goat, or whatever) like any other granola or even as a snack if you're feeling peckish (some of it does kinda resemble birdseed).

Anyway, have fun with this and BE CREATIVE! Make this granola your OWN!

MAKES A LOT (SEE PIC ABOVE)!

INGREDIENTS (AT LEAST THE ONES I USED)

Roughly:

500g organic whole grain rolled oats (not instant)

2 handfuls skinned whole hazelnuts

2 handfuls sliced almonds

1 handful roughly chopped pecans or walnuts or both

1 handful pumpkin seeds

1 handful sunflower seeds

1 tsp fine sea salt

1 tsp ground cinnamon

3 or 4 tbsp grapeseed (or other light oil)

4 tbsp honey (or maple syrup or both)

1 tbsp molasses

3 handfuls mixed raisins, sultanas, dried cranberries (or any other dried fruit: chopped dates, figs, prunes, dried pineapple...)

METHOD:

PREHEAT OVEN TO 180C/350F

LINE A LARGE BAKING SHEET WITH FOIL AND BRUSH WITH A LITTLE MORE OIL.

Toss all the first 8 ingredients into a large mixing bowl and mix thoroughly.

Add the oil and toss again, lightly coating the oats, nuts and seeds.

Drizzle over the honey or maple syrup and mix again.

Spread this mixture evenly onto your foiled, oiled baking sheet and place in oven.

Bake for about 40 minutes, checking that it doesn't burn. 

Run a fork through the mixture 2 or 3 times to make sure all the ingredients get toasted. When it's a similar colour to my granola in the pic, remove from oven. Let cool a little and empty into a large clean bowl.

Try and scrape any bits sticking to the foil into the bowl too. These are the best bits, all honeyed and praline-y.

Add your dried fruit and toss through.

When cool, store in an airtight jar or large Tupperware box.

That's it! So now you can forget about paying a king's ransom for the store-bought, so called artisan varieties. 🥰
