
Luscious Mango Mojito

So, you may have noticed a slight change of SUBJECT in the email you received this time: CREATIVE DRINKING IN THE TIME OF CORONA. No, I am not changing the theme permanently but today I want to share with you a drink Mike and I made yesterday evening after going for the most amazing walk in our local rainforest park. (Happily we can still walk in the park, despite so many COVID-19 restrictions. Both of us have been fully vaccinated and we have to show our certificates, which is very reassuring. INGREDIENTS (for 2 large cocktails)
1 medium sized mango, diced
3 limes, juiced
small handful mint leaves
2 tbsp raw sugar
1 tsp maple syrup
pinch salt
100 ml white or pale rum
sparkling water to top up
mint sprigs to garnish
crushed ice
METHOD
Put your diced mango, lime juice, mint leaves, raw sugar, maple syrup and salt into a cocktail shaker or sturdy jar. Pound everything with a muddler or other suitable kitchen implement if you don't have one of those - until all ingredients are "mooshed" together. (Yes, I know it's not a very professional description!) If you've used a jar so far, then pour that mixture into your cocktail shaker and add the rum. Give it a good shake. Then, fill two good (I'm a big crystal fan, myself) tumblers with crushed ice and pour over the mixture. Add a few splashes of sparkling water to fill to the top and garnish with whole mint sprigs.
I'm pretty sure this must be what heaven tastes like. 😋
