Annie's Apple & Passionfruit Crumble
Yes, I know this photo doesn't show you the finished apple and passionfruit crumble. In fact, it doesn't even show you anything cooked. There's a reason for that. I didn't get a chance to take a shot of the finished dish because before I knew it, it was all gone! Compliment to me I know but maybe kinda sad for you? So, this is a shot of the crumble mixture before it was baked, which actually I find quite beautiful. Not as beautiful as the taste of the finished dessert though. You just gotta believe me and try it! It's a winner!
INGREDIENTS
6 green Granny Smith apples, peeled, cored and finely chopped
Flesh from 5 passionfruit
Juice from 2 lemons
4 tablespoons caster sugar (or to your taste)
1 tsp powdered cinnamon
Light sprinkle powdered cloves
½ tsp powdered ginger
½ tsp grated nutmeg
200g organic oats
200g fresh grated coconut
2 tbsp toasted fresh coconut
100g caster sugar
100g Muscovado sugar
100g melted butter
METHOD

Preheat oven to 170C.
Mix all the first 8 ingredients together and let rest in a large bowl or Tupperware. I left mine overnight covered in the fridge.
Mix next 5 ingredients together in another bowl.
Place the juicy apple mixture in an ovenproof ceramic dish.
Cover with half the oat mixture and pour over half of the melted butter.
Add the rest of the oat mix and pour over the rest of the melted butter.
Bake in the oven for at least 40 minutes (or more). Test gently with a fork to make sure apples have cooked through. The topping should get lovely and brown and crunchy.
