CHILLI COCONUT MARGARITA
Some people love wine. Some stick with beer. Or spirits, straight up. As for me, I'm right into cocktails. There are plenty of creative cocktails in plenty of amazing bars around the world, but I'm always a sucker for a Margarita. It's that crazy salty, sour combo! But then, I started experimenting a bit (as I do) and added 'sweet' and 'hot' flavours to the mix. And let me tell you, this is the ultimate bomb, not for faint-hearted gringos that's for sure. Plus it's impossible to be angry, depressed, fed up, bored, or in any other COVID-19 state of mind after one (or two) of these. Salud! 🍸.
SERVES 1
INGREDIENTS
2 lime wedges
Himalayan pink salt (my preference but any coarse salt will do)
cracked ice
3 measures of chilli-infused tequila (3 different kinds here to make the photo pretty but you choose your favourite)
1 measure Cointreau or Triple Sec
2 measures freshly squeezed lime juice
1/2 measure coconut syrup
METHOD
1.
Measure your tequila into a glass lidded jar and add a hot chilli.

Leave to infuse for at least an hour, or longer if you like it 🔥.
3.
Rub the rim of your martini glass with a lime wedge and dip into a saucer of salt. Put glass in freezer for at least 1/2 hour.
4.
Put the cracked ice cubes into a cocktail shaker. Pour over the tequila, Cointreau or Triple Sec, lime juice and coconut syrup and shake vigorously until well chilled
5.
Decorate with remaining lime wedge.
6.
Sip slowly while watching a funny movie. 🤪
