     Cinnamon Walnut Cookies

Some years ago, Mike and I discovered Super Save Department store, a retail wonderland filled with all kinds of amazing things you never knew you needed until something on a shelf begged you to buy it. That was the case with a huge, and cheap, glass cookie jar I spied, which I just knew I had to have so I could fill it with all kinds of yummy baked treats. The cookie jar has been neglected for quite a while, while my oven was being repaired. Six weeks to be exact. 🤬 But now that it's back, I decided the time had come to fill her up. My beautiful neighbour Anastassiya joined me in the kitchen and together we produced these crispy cookies. (By the way the jar was filled but, before I could whip out my iPhone to capture it overflowing with our Cinnamon Walnut Cookies, somehow half of them mysteriously disappeared. I believe my guest cook and my hungry husband had something to do with that. 🐷🐷 That's how more-ish they are!  

INGREDIENTS FOR ABOUT 40 COOKIES

1 cup walnuts

2 cups plain flour

2 tsp cream of tartar

1 tsp baking soda

pinch salt

224g unsalted butter, at room temperature

1 1/2 cups white sugar

2 large eggs

2 tsp ground cinnamon mixed with 6 tbsp white sugar in a shallow bowl

METHOD

Line 2 baking sheets with baking paper

Preheat oven to 180C (350F)

Place your walnuts and flour into the bowl of a food processor and whizz until walnuts are crushed into the flour.

Empty walnut/flour mix into a big bowl.

Stir in the cream of tartar, baking soda, and salt.

Using a hand beater or a stand mixer, beat your butter and sugar until pale and fluffy.

Add the eggs, one by one, and beat until smooth..

By hand, mix in the dry ingredients until well blended.

Grab a little of the mixture and roll into a little ball (about 1" in diameter).

Roll the ball in the sugar/cinnamon mixture until well coated and place on the lined baking tray.

Flatten slightly with your index and middle finger.

Repeat until you've filled your trays.

(They will spread as they bake so leave gaps between your dough patties.)

Bake on two levels of your oven, swapping levels halfway through baking. (Mine took about 15 minutes to brown but all ovens are different so keep your eye on them.)

Remove trays from oven and gently ease your cookies off the tray to cool on racks.

Repeat with second batch (and third if you've made them smaller than I did.)

When they're cool, they're ready to grace that cookie jar.
